11/5/14 Sloppy Joe Night

LuckyPotLuck Link – I prepared vegetarian, actually vegan, Sloppy Joe mixture using a recipe found at The Vegetarian Resource Group web site.  This is a link to the recipe, including nutritional data.  The recipe says it makes 4 sandwiches, those are very large portions.  It easily makes 6 sandwiches.   Before preparing this dish for MESH I made it once as the center of a  meatless Monday meal for my family.  Based on that test run, and our tastes, I made the following changes when I doubled the recipe for UUCM MESH Cafe: Continue reading

10/29/14 Spooky Rotisserie Chicken

LuckyPotLuck Link I am made Pumpkin Maple Pies for this meal.  To make Maple Pumpkin Pie I make two small changes to the recipe found on the label of Libby’s Pumpkin cans.  First I always, that is for both plain and maple pumpkin pie, double the recommended amount of ground cinnamon.  Then to change a plain pumpkin pie into a maple pumpkin pie I eliminate the granulated ( white ) sugar and substitute a combination of maple syrup and maple sugar.  For each pie it’s .5625 cups of maple syrup ( that’s ½ cup plus 1 tablespoon ) and one tablespoon of maple sugar.  Here’s a link to the Libby’s Famous Pumpkin Pie recipe.

10/22/14 Meal – Mexican

LuckPotLuck Link I plan on making Mexican Chocolate Pudding.  A few weeks ago I made Vegan Chocolate pudding which was easy to prepare and well received.  I’m testing a variation that will add some cinnamon and a bit of chile powder.  The original recipe follows: Vegan Chocolate Pudding.  Making a Mexican variation was inspired by seeing this recipe in the New York Times: Mexican Chocolate Tofu Pudding.  My first test was a failure, too spicy for MESH or 3/4 of my own family.  I’ll test again on Sunday 10/19 then seek collaborators.

Success with 1 tsp of cinnamon and 1/4 tsp of Chili powder added to the Vegan Chocolate Pudding recipe for each multiple of 6 servings being prepared.  Since I prepared batches of 12 or 24 servings the first time I prepared this for MESH, it’s 2 tsp of cinnamon and 1/2 tsp of Chili powder added to the Vegan Chocolate Pudding recipe for each multiple of 12 servings being prepared.  Anyone like to collaborate?
